This is a wide ranging course that includes all the fine details about cooking and dining that is essentially Culinary Culture of modern times. This includes:
- Hygiene in the kitchen
- Health in the kitchen
- Healty eating
- Cooking methods
- White and Red meat stock
- Hot and cold sauces
- Horsd'oeuvre, hot and cold starters
- Beef, lamb, fish, chicken, turkey, duck dishes chosen from world cuisine ( cleaning, cutting, portioning, storing, flavouring and cooking methods and techniques)
- Side dishes
- Desserts
- Cooking with alcohol
- Which wine with which dish
- Presentation and table set up
Participants who finish this course, additionally, are able to enter the English world renowned Culinary Arts Certificate examination.
