Once a Week

Duration 16 weeks (16 lessons) Total of 64 hours.

 

This is a wide ranging course that includes all the fine details about cooking and dining that is essentially Culinary Culture of modern times. This includes:

 

  • Hygiene in the kitchen
  • Health in the kitchen
  • Healty eating
  • Cooking methods
  • White and Red meat stock
  • Hot and cold sauces
  • Horsd'oeuvre, hot and cold starters
  • Beef, lamb, fish, chicken, turkey, duck dishes chosen from world cuisine ( cleaning, cutting, portioning, storing, flavouring and cooking methods and techniques)
  • Side dishes
  • Desserts
  • Cooking with alcohol
  • Which wine with which dish
  • Presentation and table set up

 

Participants who finish this course, additionally,  are able to enter the English world renowned Culinary  Arts Certificate examination.
